Missing backs and cold tilapia

Ola Peeps,

Yes..I know I'm overdue on updating this thing. Life's been dull. What can i say?

Today was supposed to be an exciting day.First our office meeting, then Broker tour and then a catered lunch.

The morning starts off by me trying on about 10 shirts ..all of which were immediately taken off and thrown into my ever growing "REJECT" pile of clothes that make me look fat(er).
Then I realize that somewhere in all the shirt flinging I lost one of the backs to my diamond earring. Great. Thank god I found out before the earring was gone though. It will be a miracle if I ever find it .

I start on my way to my excitement filled day and my new cell phone rings for the first time ever. (more on that later)
It was co-worker E ,she had been on her way to the meeting and had a flat tire. So I went and picked her up. We left her car there for her DH to deal with.
She's also the one I'll be riding to Little Rock with tomorrow , so good thing she had the flat today. Rather than a blowout later on the freeway.

WE go to our office meeting ,only to find out that tour had been canceled because it was rainy , freezing and windy. And the catered lunch was not until the 27th. My Alzheimer's!! ack!

So I was starving to death by then.Called Floozie1 to see if she wanted to go lunch. She had already eaten. So I came home ate my lean cuisine and then spent a couple hours typing about a hundred more names on my mailing list.
Then it was die of boredom or actually do a bunch of housework. I chose to take my 2 hour nap instead.

Thank God I got new movies in the mail yesterday. My summer story,Irresistible, and United 93. Old , but new to me.

Son Three just called me from the grocery store .He said "did you see how much snow we got?"
About another 8 inches.Good ole Chicago...I DO NOT MISS YOU ,YOU COLD BITCH!!!

He was calling because it's his GF's birthday and wanted to know a good dinner to cook for her. What a sweet kid! I never had a 22 year old boyfriend cook a damn thing for me. I've barely had a grown man cook anything edible. (we're not counting bar-b.q. of course)
So I recommended that he make the Parmesan crusted tilapia and dilled baby carrots.

here is the recipe for you unfortunates who don't have it......it is awesome!!

2 lbs tilapia fillets (orange roughy, cod or red snapper can be substituted)
2 tablespoons lemon juice
1/2 cup grated parmesan cheese
4 tablespoons butter, room temperature
3 tablespoons mayonnaise
3 tablespoons finely chopped green onions
1/4 teaspoon seasoning salt (I like Old Bay seasoning here)
1/4 teaspoon dried basil

black pepper
1 dash hot pepper sauce

  1. Preheat oven to 350 degrees.
  2. In buttered 13-by-9-inch baking dish or jellyroll pan, lay fillets in single layer.
  3. Do not stack fillets.
  4. Brush top with juice.
  5. In bowl combine cheese, butter, mayonnaise, onions and seasonings.
  6. Mix well with fork.
  7. Bake fish in preheated oven 10 to 20 minutes or until fish just starts to flake.
  8. Spread with cheese mixture and bake until golden brown, about 5 minutes.
  9. Baking time will depend on the thickness of the fish you use.
  10. Watch fish closely so that it does not overcook.
  11. Makes 4 servings.
  12. Note: This fish can also be made in a broiler.
  13. Broil 3 to 4 minutes or until almost done.
  14. Add cheese and broil another 2 to 3 minutes or until browned.
  15. Thank you Mama's Supper Club in Wisconsin.
